Powering up the Pinoy palate to the Max

Recently, Max’s restaurant introduced its Max’s Specials, which are reminiscent of old-style home cooking but with today’s modern tastes.
First on the line is the Pork Adobo with Ensaladang Kangkong. The Max’s’ version of the adobo is fried until crisp. The taste of fried pork embraces one’s taste buds and then fills it with sweetness and umami. It is then paired with ensaladang kangkong, whose freshness balances the saucy, tasty flavor of the meat.
The Max’s Crispy Tilapia with choice of tomato or labanos salsa will certainly leave one craving for extra rice.
The lightly-breaded, de-boned tilapia is fried until crunchy. And, it blends well with the sweetness and the tad spicy goodness of the tomato salsa, including the sweet and sour goodness of the labanos vinaigrette concoction.
Another must-try is Max’s Grilled Baby Back Ribs that comes in half or full orders. This juicy, Western rib dish is made very Filipino with the pineapple and tomato salsa served on the side. The salsa tempers the slab of flavorsome, tender meat drenched in savory barbecue sauce.
All of these Max’s Specials certainly get even better when paired with the Max’s Paella Sinangag. The colorful, flavored rice mixed with various meat, seafood, and vegetables is reminiscent of its Spanish roots. It is complete with the flavors of the usual paella, But the Paella Sinangag doesn’t have a sticky composition. It is considered a primer for bringing out the best in Max’s yummy-to-the-bones chicken.
