Chef JP Anglo presented a feast celebrating Filipino cuisine in Spain

Filipino food is truly making waves beyond the Philippine borders. After wowing major cities in the world, its latest destination is Spain as noted chef JP Anglo whipped up a luncheon celebrating Filipino cuisine with Sociedad Bilbaina, one of the oldest and finest clubs in Europe.

Last March 26, over 100 Spanish people in Basque Country feasted on the chef’s take on beloved Filipino cooking. Included in his menu are Pinoy dishes like tortang talong and lechong kawali with garlic rice, pancit palabok, coconut leche flan, and kinilaw, which, according to him, was one of their favorites.

“When you introduce something, you don’t want to come in too strong, you just want to blend in first, which we kind of did, we blended in the kitchen. Everyone learned from each other and I think that’s the greatest thing—two cultures uniting as one. It is all for just cooking good food,” the chef said during his speech. “We may be far away from each other, but then again we do have our similarities, which I think reflected in the food. Everything from that kitchen and everything that I know through my experience we put all on the table.”

Apart from whipping up the best Filipino eats, Chef JP also got the chance to work with Chef Carmelo Bengoechea, who leads the club’s kitchen. Through an Instagram post, he shared a moment when the chef tried Filipino-made vinegar.

“Chef Carmelo at 63 is a makina/machine in the kitchen,” he posted. “Mucho respeto, senior, and muchisimas gracias for inviting me to your family meal. I am learning so many new things from you and your kitchen!”

Prior to cooking in Spain, Chef JP opened earlier this year his restaurant based in Dubai called Kooya Filipino Eatery, where he serves his version of grilled tofu, pancit molo, kare-kare, and chicken inasal, among others. Get to know more about it here.
