A lifetime spices & herbs guide (Part 1)
For almost a year now I’ve been studying with my friend--who writes about food and practices all the available spice usages in the Filipino kitchen, mastering their aroma, and their combinations with each other--just to come up with a good spice guide for me to write about. My friend secretly tests different spices and herbs in order to master their proper combinations and he does this because he wants to please his mentor by being thoroughly familiar with the art of combining spices. Here are most of our findings, with our basic recommendations; feel free to explore and experiment with them in your kitchens. We hope this will help and guide you in your daily and festive cooking.

Torbreck Wine Dinner
At a recent tasting held at the Tivoli in the Mandarin, a few lucky souls (like me) were able to taste a wide range of recent releases from one of Australia’s highly rated, mid-sized wineries from the Barossa Valley called Torbreck Wines. Wine maker David Powell has been producing highly rated wines and has been acclaimed by the most famous wine critiques. Part of his secret is his ability to spot old, neglected vineyards and rehabilitate them. Of course, these old, neglected vineyards have old vines, some about a hundred years old. Such vines yield very intense and tasty fruit, although it is rather low yielding when it comes to grapes. This in turn brings about relatively high-priced but superb, quality wines. But some wines are of good value and are must-try wines for those looking for new experiences.

Lotus Garden Hotel’s up-and-coming Cilantro Bar
The Lotus Garden Hotel will launch the new Cilantro Bar sometime in May, and they would like you to think that it’s a sports bar. However, don’t let that fool you; food at the Cilantro is guaranteed to be first-class and service with pristine white gloves. This gastro-sports pub, located at the corner of A. Mabini and Padre Faura in Malate, Manila, is geared to serve classy, cilantro-based dishes with fresh ingredients, and rather imaginative platings.

Jap Chic
An automatic "Wow!" escaped my lips as I entered the newly renovated Inagiku Restaurant of the Makati Shangri-La. The entrance hints of classic elegance. A Japanese kimono-garbed mannequin with arms spread out greets all customers. The feel was entirely high end with the waiters greeting you in their Rajo Laurel attires.

Fun dining at Bubble Gang Toppings
After getting a dose of laughter from GMA–7’s "Bubble Gang" on a Friday evening, expect loyal viewers of the mentioned gag show to troop to the favorite hangout of their favorite group of comedians: Bubble Gang Toppings.
