ALL OUT: Ann Palo-Kuy
Again and again, I had to rush to know from myself what I fancy for lunch everyday. Since everyone seems to be fasting, I had to think by myself. What to eat? What to eat?
I clearly exclaimed "There!" to myself upon seeing full tables while trekking Glorietta 3 with an empty stomach. It was Cibo, good thing. Part of the chain of restaurants (Cibo, Pepato, Café Bola) owned by Margarita Fores. I again asked myself…Should I have their Black Pasta? The Spinach Dip? I forgot their real Italian names but the Cibo waits always remember the bestsellers.
With my empty tummy, I decided to go light and easy. Okay! Since I am a Cibo regular, I opted to try dishes I haven’t tried yet.
Panini al Tonno (P145) was crunchy good. It had vegetables, vegetables and vegetables – alfalfa sprouts and tuna (which is the tonno) made up most part of the sandwich. The sidings of potato chips with mayo dip lasted for three seconds on the plate. There beside the mayo dip was rock salt. Very Italianesque. Since I love the crunch of alfalfa mixed with the tuna. The olive oil wasn’t much to overpower the ingredients. My wish: I love the chips, please add some more.
I am a pasta-lover. I need to have pasta in an Italian resto. I chose the Pasta Nettuno (P235). You see, I am also a basil-lover. The pasta was linguine which was heavy pasta but the ingredients are mama mia for weight watchers. Well, if carbs are part of your diet. This version had basil pesto – very light. It had a dash of parmesan and bits and pieces of boiled shrimp and squid which was a bonus. Normally, this dish is plain basil and two kinds of cheese. I kinda missed the Black Pasta with squid ink though. Well, anyway, my goal this month is to get rid of all excesses in life which includes some weight.
Since Cibo’s interiors are luxe, you will feel that the P380 total bill is a steal. It feels great! It’s an affordable meal with top of the line interiors, waits, plates, utensils, tables and chairs. The meal was served fast. The waits abound (meaning: no screaming for their attention). The ingredients are at par with the interiors. It was a great deal! Buono!
Cibo’s cibo was
FOOD – eccellentissimo (excellent)!
PRICES – afforable
SERVICE – fast and efficient
AMBIENCE – very expensive
LOCATION – Glorietta, Rockwell, Megamall are highly accessible places

Panini Al Tonno, My Way
INGREDIENTS:Bread pockets
1 cup Alfalfa sprouts
½ cup Tuna
Sliced black olives
½ tsp Olive Oil
PROCEDURE:
1. Mix alfalfa, tuna, olives in a bowl.
2. Add olive oil and a dash of salt to
taste.
3. Place inside bread pockets or
bread slices.
4. Assemble on a plate.
5. Add some potato chips on the
side.
