THE MOUNTAIN MEAT When I decided to take a crash course in cattle fabrication just recently, a friend advised me to visit a traditional abattoir at the Mahogany Market in Tagaytay City, so I could learn "first hand" the techniques of "cattle-to-beef" production. But honestly, I just went there to search and sample good bulalo pochero, a "superior-stock" of beef meat, bone and marrow with vegetables.
