The New Tang Dynasty At the peak of their popularity, most restaurants wouldn’t take the risk of reinventing their menu. There’s the possibility of alienating your regular patrons, falling short of your clientele’s expectations, or simply failing to make the new menu work. The menu is the most critical point of a restaurant’s success. Tweaking it occasionally is relatively good (adding new dishes, improving on them, and removing the unpopular ones), but shifting it can really be hazardous. However, popular fast-casual Chinese restaurant Tang City did it anyway.
